1. Pumpkin Soup
This warm flavorful soup is a classic as it catches the essence of Fall and will be sure to keep you cozy. You can even add some roasted pumpkin seeds as a garnish.
1 tbsp. extra-virgin olive oil
1 large onion, coarsely chopped
4 cloves garlic, minced
4 lb. pumpkin (any kind but preferably sugar pie)
4 c. low-sodium chicken broth
Freshly ground black pepper
1/2 c. heavy cream, plus more for garnish
This pasta is just the kind of comfort food you need on those days or nights spent inside. This dish is an excellent option for friends and family, it’s extremely filling and you can cook a large portion without having to spend hours in the kitchen.
200 g spaghetti (use gluten-free if you are gluten-intolerant)
3 tbsp / 45 ml olive oil
2-3 garlic cloves, finely diced
2 cups of cubed butternut squash / pumpkin*
about 100 g spinach
1⁄2-1 tsp chilli flakes (depending on the level of heat and your preference)
salt and pepper, to taste
30 g walnuts, finely chopped
1. Preheat oven to 435o F and coat cubed butternut squash with 1tsp of olive oil, then season with salt. Bake for about 40-50 minutes, until butternut squash turns soft and becomes lightly caramelized.
